Things You'll Need
1 cup cornmeal
1 cup all-purpose flour
1 tsp kosher salt
1 tbs baking powder
1 cup whole milk, room temp
1 large egg, room temp
5 tbs melted unsalted butter, slightly cooled & divided
2 medium jalapeños, deveined, deseeded, and chopped
1 cup shredded sharp cheese, plus a bit extra
1, 9-inch pie dish
Step 1
Heat oven to 400°F. Add the cornmeal, flour, baking powder and salt to a large bowl and whisk to combine.

Add the milk, egg and 4 tbs of the melted butter to a medium bowl. Whisk to combine.
Step 3
Fold the wet ingredients into the dry until just combined. Add the diced jalapeños and cheddar, folding just a few more times to incorporate. Do not over mix.
Step 4
Use the remaining tablespoon of butter to grease the pie dish. Pour the batter into the dish and top with additional cheese if desired.
Step 5
Place the dish into the oven for about 20 minutes, or until a toothpick inserted into the center comes out with only a few moist bits attached to it. Serve slightly warm or at room temperature and enjoy!
