Rich in flavor and light in calories, these healthy turkey lettuce wraps are as versatile as they are quick to the table.
Things You'll Need
2 tablespoons sesame oil
1 pound ground turkey
2 cloves garlic, minced
3 teaspoons ginger, minced
1 red bell pepper, diced
1 small onion, diced
8 ounces mushrooms, diced
1/4 cup hoisin sauce
4 tablespoons soy sauce
1 cup cooked rice
3 green onions, thinly sliced
1 head butter lettuce
Shredded carrots
Sliced water chestnuts
Cilantro
Step 1: Chop Vegetables
Dice mushrooms, red pepper, onion, garlic, ginger, scallions and cilantro.

Step 2: Cook Turkey
Pour 1 tablespoon of sesame oil into a large sauté pan and cook over medium heat until browned all the way through. Set cooked turkey aside.
Step 3: Cook Vegetables
Pour the remaining sesame oil into the same sauté pan and cook your vegetables on medium-low for about 10 minutes until soft.
Step 4: Combine Everything
Add turkey, rice, hoisin sauce and soy sauce to the vegetables.
Tip
Adding the cooked rice helps absorb extra liquid, making these lettuce cups less drippy than most.
Step 5: Sprinkle with Garnish
Add chopped scallions and cilantro on top.
Step 6: Fill Lettuce Cups
Use a large spoon to fill a lettuce leaf with the turkey mixture.
Add garnishes: shredded carrots, water chestnuts or both.
Step 7: Serve and Enjoy
Lettuce wraps are best served immediately with extra soy sauce and hot sauce available.
