This cast iron skillet calzone is delicious. It's a versatile, quick and easy meal that comes together in no time, and is bursting with cheesy, comforting flavor. It's the perfect weeknight dinner to have in your repertoire.
Things You'll Need
2 tablespoons olive oil
1/2 small onion, chopped
2 cloves of garlic, minced
1 tablespoon dried oregano
1 pound (450 grams) ground beef
1 cup marinara sauce
1 pound (450 grams) fresh pizza dough, or frozen pizza dough thawed
1 cup mozzarella cheese, shredded
1 cup finely chopped vegetables, e.g. peppers, zucchini, mushrooms
1 small egg, lightly beaten for the egg wash
1/4 cup parmesan cheese, grated
Salt and pepper
Fresh herbs for garnishing (optional)
Step 1: Cook the Filling
Pre-heat the oven to 400 degrees Fahrenheit (200 degrees Celsius).

In a large cast iron skillet, heat the oil until warm and shining. Add the onion, garlic and oregano. Cook, stirring often, until translucent for about 5 minutes.
Add the ground beef and cook until browned, a further 5 minutes. Make sure to use a wooden spoon to break up the meat as it cooks. Stir in the marinara sauce and vegetables. Season with a little salt and pepper.
Remove the mixture from the skillet and place it into a separate bowl. Wipe out the skillet with a paper towel. Set aside.
Step 2: Roll Out the Dough
Divide the pizza dough in half and set it onto a lightly floured work surface. Roll each half of the dough out and into a rough circle, a few inches larger in size than the skillet you are using.
Step 3: Assemble the Calzone
Place one of the dough circles into the base of the skillet, making sure to gently press around the sides and into the edges.
Sprinkle half of the mozzarella cheese over the dough. Top with filling, then sprinkle over the remaining mozzarella cheese. Season with a pinch of salt and pepper.
Place the remaining dough circle over the top of the skillet. Pinch and roll the edges of the dough halves together to seal. Brush the top with a little of the egg wash, then sprinkle over the parmesan cheese. Use a knife to slice a small vent into the top crust.
Step 4: Bake
Bake the calzone for 25 to 30 minutes, or until golden brown, fragrant, and the filling is bubbling.
Step 5: Serve & Enjoy
Remove from the oven and let it stand for 10 minutes before garnishing with fresh herbs, slicing, and serving.
